First Time Cooking Jackfruit - Jackfruit Curry

After finding the tinned Jackfruit in Tesco I thought I'd give making a curry a go. I just my regular curry recipe but instead of chicken I just used Jackfruit. I also added butternut squash to bulk out the curry as the Jackfruit was strangely cut into triangles in a circle tin... so I didn't actually get much Jackfruit!

This recipe uses just a tin of tomatoes blended with garam masala, turmeric, cumin and ground coriander so works really well as a vegan meal too!

The texture was definitely strange and seemed to look like a melon but tore apart like, well, chicken or pork.

After letting the curry simmer I tried to pull apart the Jackfruit, once it was more cooked it pulled apart quite easily compared to straight from the tin. It was really strange looking at it because if I hadn't of been told, I'd assume it was chicken.
The curry turned out okay, I found the squash made the recipe too sweet and didn't enjoy it as much. Next time I'd skip the squash but not sure how I'd bulk it out. With the pulled parts of the Jackfruit you couldn't really tell it was fruit or not. I think this would work far better in tortillas or burgers rather than a curry but at least it was attempted.
Overall I'm not really sure how the Jackfruit went down, I don't think this recipe suited the fruit. Next time I'd perhaps try chickpeas and Jackfruit with a different type of curry sauce.

'All change' casserole recipe and review

If you live in the UK you'd have been many adverts of Tesco. They have a series of adverts called Love Food Stories which feature different recipes to make at home. The latest being Carls 'all change' casserole. Recipe here :  I used Linda McCartney's vegetarian Chorizo and Red pepper sausages which were on offer in Tesco. The recipe feeds four with two sausages each so I halved a few of the quantities as I'm only feeding two.  Some adjustments to the recipe I made were, keeping the same amount of butternut squash so this bulks out the meal a bit more. I didn't have Harriott beans so instead used butter beans. I also had no spinach so just went without.. (next time I will try the spinach). I also added a yellow pepper which was not in the recipe. I felt it would pack it out more. It was simple and easy to cook which is great for coming home after work.  I was quite impressed with the simplicity of the recipe but it was really tasty. The sausages are actu...
