'All change' casserole recipe and review

If you live in the UK you'd have been many adverts of Tesco. They have a series of adverts called Love Food Stories which feature different recipes to make at home. The latest being Carls 'all change' casserole. Recipe here

I used Linda McCartney's vegetarian Chorizo and Red pepper sausages which were on offer in Tesco. The recipe feeds four with two sausages each so I halved a few of the quantities as I'm only feeding two. 

Some adjustments to the recipe I made were, keeping the same amount of butternut squash so this bulks out the meal a bit more. I didn't have Harriott beans so instead used butter beans. I also had no spinach so just went without.. (next time I will try the spinach). I also added a yellow pepper which was not in the recipe. I felt it would pack it out more.

It was simple and easy to cook which is great for coming home after work. 

I was quite impressed with the simplicity of the recipe but it was really tasty. The sausages are actually more tasteful than meat sausages. I found the texture to be tougher when cutting but no reduction in size because there was no fat to loose. However, I do note the increased amount of salt in these sausages but such a reduction in fat. In a meat-meat alternative comparison you can see the health benefits:
Vegetarian sausages have 10% more salt than a meat based sausage and 6% more sugar. However, they have the same calories 17% less fat and 28% less saturated fat. The massive difference in saturated fat is great.
 
To the meal!
While I was preparing the meal it felt a little small portion wise, I'd imagine for a bigger eater that you'd need an extra sausage per person or perhaps pack it with more squash. If I hadn't of put a pepper in it would have been that little bit smaller! However, it was very tasty and with a dish like a casserole you really can't tell you've got a meat alternative in there, especially when it is full of flavour. 

My fiancee also enjoyed the meal so that's always a good start too, the portion was fine for him but I was left wanting more. Whether that's just being because it tasted good I don't know! It would probably go great with rice but I'm trying to avoid making all my meals a curry style.

One minor detail is washing up is so much cleaner, no fat! No scrubbing the pan, perhaps a positive benefit to the drains, my belly and my kitchenware.  

Overall I really enjoyed this meal, it was a great switch out. I will be adding the recipe into my recipe book, thanks Tesco!

Our Tesco shop includes a variety of Tesco's own vegetarian meat alternatives. We picked these kievs as we definitely enough a good kiev. Upon appearance they look exactly like a regular kiev, I'd even go to say that the texture is very similar to a meat version (processed kind not homemade). Jamie Oliver Homemade Veggie Burgers

Our Friday nights usually involve a 'lazy' meal. Chips and a good bit of something else. I decided to try a veggie burger recipe by I saw in the Tesco Magazine by Jamie Oliver. The ingredients are very simple, so nothing special I had to go out specifically for (after stocking up on chickpeas). I did minus the coriander and the lemon purely because I didn't have them to hand. I had to use a food processor to blend up the sweetcorn and chickpeas, which I don't have. Instead I ended up using my Breville blender for shakes. It was quite a faf because you need a liquid in the mix to get it going and it kept just blending the bottom ingredients. I had to keep emptying out the blended bits and re-filling to get it all blended together. The consistency probably wasn't as good as it could have been.
