After finding the tinned Jackfruit in Tesco I thought I'd give making a curry a go. I just my regular curry recipe but instead of chicken I just used Jackfruit. I also added butternut squash to bulk out the curry as the Jackfruit was strangely cut into triangles in a circle tin... so I didn't actually get much Jackfruit! This recipe uses just a tin of tomatoes blended with garam masala, turmeric, cumin and ground coriander so works really well as a vegan meal too! The texture was definitely strange and seemed to look like a melon but tore apart like, well, chicken or pork. After letting the curry simmer I tried to pull apart the Jackfruit, once it was more cooked it pulled apart quite easily compared to straight from the tin. It was really strange looking at it because if I hadn't of been told, I'd assume it was chicken. The curry turned out okay, I found the squash made the recipe too sweet and didn't enjoy it as much. Our Friday nights usually involve a 'lazy' meal. Chips and a good bit of something else. I decided to try a veggie burger recipe by I saw in the Tesco Magazine by Jamie Oliver. The ingredients are very simple, so nothing special I had to go out specifically for (after stocking up on chickpeas). I did minus the coriander and the lemon purely because I didn't have them to hand. I had to use a food processor to blend up the sweetcorn and chickpeas, which I don't have. Instead I ended up using my Breville blender for shakes. It was quite a faf because you need a liquid in the mix to get it going and it kept just blending the bottom ingredients. I had to keep emptying out the blended bits and re-filling to get it all blended together. The consistency probably wasn't as good as it could have been. Some blended too much and some hardly at all.
