Our Friday nights usually involve a 'lazy' meal. Chips and a good bit of something else. I decided to try a veggie burger recipe by I saw in the Tesco Magazine by Jamie Oliver. The ingredients are very simple, so nothing special I had to go out specifically for (after stocking up on chickpeas). I did minus the coriander and the lemon purely because I didn't have them to hand. I had to use a food processor to blend up the sweetcorn and chickpeas, which I don't have. Instead I ended up using my Breville blender for shakes. It was quite a faf because you need a liquid in the mix to get it going and it kept just blending the bottom ingredients. I had to keep emptying out the blended bits and re-filling to get it all blended together. The consistency probably wasn't as good as it could have been. Some blended too much and some hardly at all.
